Zeta Potential - Measure of the speed with which charged oil droplets travel under the influence of a unit electrical field, or the potential difference from the surface of the droplet out into the bulk.
The zeta potential in physical chemistry is measured by electrophoresis. It gives the value of the potential (in mV) of a colloid in a suspension at the boundary between the Stern layer and the diffuse layer.
